1 cup all-purpose flour

1/2 cup granulated sugar

1 teaspoon baking powder

1/4 teaspoon salt

5 large egg whites, room temperature

1 teaspoon vanilla extract

1/2 teaspoon cream of tartar

1/2 cup unsalted butter, melted

1 cup cinnamon sugar (for coating)

In a medium bowl, whisk together the flour, granulated sugar, baking powder, and salt until well combined.

    In a separate large mixing bowl, beat the egg whites using an electric mixer on medium speed until frothy.

      Add the cream of tartar and vanilla extract to the egg whites, then increase the mixer speed to high, beating until stiff peaks form.

        Gently fold the dry ingredients into the egg whites in three additions, being careful not to deflate the mixture. Mix just until combined.

          Carefully fold in the melted butter until fully incorporated.

            Preheat oil in a deep frying pan or a deep fryer to 180°C (350°F).

              Using a small cookie scoop, drop spoonfuls of the batter into the hot oil, frying a few at a time for about 2-3 minutes or until golden brown.

                Once cooked, use a slotted spoon to transfer the churro bites to a paper towel-lined plate to drain excess oil.

                  While still warm, roll the churro bites in cinnamon sugar until evenly coated.

                    Serve immediately for the best texture and flavor.
