2 slices of sourdough bread

1 ripe avocado, sliced

4 slices of crispy bacon

2 slices of sharp cheddar cheese

1 tablespoon mayonnaise

1 tablespoon unsalted butter

Salt and pepper to taste

Optional: Arugula or spinach for added greens

Prepare the Ingredients: Start by cooking the bacon to a crispy texture. Drain on paper towels and set aside.

    Assemble the Sandwich: Spread 1 tablespoon of mayonnaise on one side of each slice of sourdough bread. This will prevent the bread from getting soggy and add flavor.

      Layer the Filling: On the non-mayo side of one slice, lay down a slice of cheddar cheese. Add the sliced avocado on top and sprinkle with salt and pepper. Then, layer the crispy bacon and, if using, some arugula or spinach. Top it off with another slice of cheese and cover with the second slice of bread, mayo side up.

        Grill the Sandwich: Heat a skillet over medium heat and melt half the butter. Once melted, place the sandwich in the skillet. Grill for about 3-4 minutes until the bottom is golden brown.

          Flip and Finish: Carefully flip the sandwich and add the remaining butter to the skillet. Grill the other side for another 3-4 minutes, or until golden and the cheese is melted.

            Serve: Remove the sandwich from the skillet and let it cool for a minute before slicing it in half. Serve warm with your favorite dipping sauce or a side of pickles.
