1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 tablespoons granulated sugar

16 oz cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1 cup heavy cream

¼ cup brown sugar (for the brûlée topping)

Prepare the Crust: Preheat your oven to 325°F (160°C). In a medium bowl, mix the graham cracker crumbs, melted butter, and 2 tablespoons of granulated sugar until well combined. Press this mixture firmly into the bottom of a greased 9x9 inch (or similar sized) baking pan. Bake for 10 minutes, then remove and let cool.

    Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add 1 cup of granulated sugar and continue mixing until well combined.

      Add Eggs and Cream: Beat in the vanilla extract, then add the eggs one at a time, mixing well after each addition. Lastly, pour in the heavy cream and mix until the batter is smooth and creamy.

        Bake the Cheesecake Bars: Pour the cheesecake filling over the cooled crust, spreading it evenly. Bake in the preheated oven for 30-35 minutes or until the edges are set but the center still has a slight jiggle. Remove from oven and let cool to room temperature, then refrigerate for at least 4 hours or overnight if possible.

          Create the Brûlée Topping: Once chilled, sprinkle an even layer of brown sugar over the top of the cheesecake. Using a kitchen torch, carefully brûlée the sugar until it melts and turns golden brown. If you don’t have a kitchen torch, you can place the cheesecake under a broiler for a few minutes, but be cautious to not burn it.

            Cut and Serve: Once the top is cooled and hardened, carefully slice the cheesecake into bars. Serve chilled and enjoy the creamy, caramelized topping with each bite.
