2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1/2 teaspoon baking soda

1/4 cup unsalted butter, cold and cubed

1 cup buttermilk (or milk with 1 tablespoon vinegar added)

1 tablespoon honey (optional)

Preheat your oven to 220°C (425°F) and line a baking sheet with parchment paper.

    In a large bowl, whisk together the flour, baking powder, salt, and baking soda.

      Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.

        Make a well in the center of the dry ingredients and pour in the buttermilk and honey (if using). Stir gently with a fork until just combined. The dough will be slightly sticky.

          Lightly flour your hands and turn the dough out onto a floured surface. With floured hands, gently pat the dough into a 1-inch thick round.

            Using a biscuit cutter or a glass, cut out biscuits from the dough, placing them on the prepared baking sheet. Gather any remaining dough, reshape, and cut out more biscuits. Aim for a thicker biscuit for that cathead style!

              Bake the biscuits in the preheated oven for 12-15 minutes or until they are golden brown on top.

                Remove from the oven and let cool for a few minutes before serving. Enjoy them warm with butter or your favorite jam!
