2 medium-sized cooked beetroots

1 cup Greek yogurt (unsweetened)

2 tablespoons tahini

1 tablespoon lemon juice

1 garlic clove, minced

1 tablespoon honey or maple syrup (optional)

Salt and pepper to taste

4 slices of whole-grain or sourdough bread

Fresh dill or parsley for garnish

Sesame seeds for garnish

Optional: crushed red pepper flakes for a spicy kick

Begin by peeling the cooked beetroots and cutting them into small cubes for easier blending.

    In a mixing bowl or a food processor, add the beetroot cubes, Greek yogurt, tahini, lemon juice, minced garlic, and honey or maple syrup (if using).

      Blend or whip until the mixture is smooth and creamy, taste testing along the way. Adjust seasoning by adding salt, pepper, and more lemon juice if required.
