1 large burrata cheese

4 slices of ciabatta bread

1 cup cherry tomatoes, halved

2 tablespoons olive oil

1 teaspoon honey

1 teaspoon balsamic vinegar

Salt and pepper to taste

Fresh basil leaves

A pinch of red pepper flakes (optional)

Prepare the Cherry Tomato Confit: In a medium saucepan, combine the halved cherry tomatoes, olive oil, honey, balsamic vinegar, salt, pepper, and red pepper flakes if using. Cook over low heat for about 20 minutes, stirring occasionally, until the tomatoes become soft and release their juices. Remove from heat and let cool slightly.

    Toast the Ciabatta Bread: Preheat a skillet or grill pan over medium heat. Lightly brush the ciabatta slices with olive oil on both sides. Toast them in the skillet for about 2-3 minutes per side until golden and crispy.

      Assemble the Sandwich: On one slice of toasted ciabatta, place a generous amount of the warm cherry tomato confit. Tear the burrata cheese and place it on top of the tomatoes.
