Zutaten
  

4 large eggs

2 medium potatoes, diced

100g bacon, chopped

1 red bell pepper, diced

1 small onion, chopped

100g cherry tomatoes, halved

100g shredded cheddar cheese

2 tablespoons olive oil

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley for garnish

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and cook for about 10-12 minutes, stirring occasionally, until they are golden brown and tender. Season with salt, pepper, and smoked paprika. Remove the potatoes from the skillet and set aside.

    In the same skillet, add another tablespoon of olive oil. Add the chopped bacon and cook until crispy, about 5-7 minutes.

      Once the bacon is cooked, add the chopped onion and diced red bell pepper to the skillet. Sauté for 3-4 minutes until they are softened.

        Add the cherry tomatoes to the skillet and stir everything together for an additional 2 minutes.

          Return the cooked potatoes to the skillet and mix all ingredients thoroughly. Create four small wells in the mixture and crack an egg into each well. Cover the skillet with a lid and cook until the eggs are done to your liking, about 5-7 minutes for runny yolks and a little longer for firmer yolks.

            Once the eggs are cooked, sprinkle the shredded cheddar cheese on top and cover again for one minute until the cheese melts.

              Remove from heat and garnish with fresh parsley before serving.
