200g Chocolate Digestive Biscuits

100g Butter, melted

600g Cream Cheese, softened

150g Powdered Sugar

200ml Heavy Whipping Cream

Zest of 1 large orange

150ml Fresh Orange Juice

1 teaspoon Vanilla Extract

3 teaspoons Gelatine, dissolved in 4 tablespoons warm water

Biscuit Base: Begin by crushing the chocolate digestive biscuits into fine crumbs. You can use a food processor or place them in a ziplock bag and crush them with a rolling pin.

    Combine with Butter: In a mixing bowl, combine the biscuit crumbs with the melted butter until the mixture resembles wet sand.

      Form Base: Press the mixture evenly into the bottom of a springform cake tin (about 23 cm in diameter) to form an even base. Place it in the refrigerator to set while preparing the filling.

        Cream Cheese Filling: In a large bowl, beat the softened cream cheese with the powdered sugar until smooth and creamy.

          Add Orange Flavor: Stir in the orange zest, fresh orange juice, and vanilla extract until well combined.

            Whip the Cream: In another bowl, whip the heavy cream until it forms stiff peaks. Gently fold the whipped cream into the cream cheese mixture until fully combined.

              Incorporate Gelatine: Allow the dissolved gelatine to cool slightly, then stir it into the cream cheese mixture, mixing thoroughly.
