1 cup sushi rice

1 1/4 cups water

1 tablespoon rice vinegar

1 teaspoon sugar

1 teaspoon salt

1 pound sushi-grade tuna, diced

2 tablespoons mayonnaise (preferably Kewpie)

1 tablespoon sriracha (adjust to taste)

2 green onions, finely chopped

1 avocado, sliced

1 tablespoon sesame oil

Seaweed sheets (nori), cut into small squares

Panko breadcrumbs, for frying

Sesame seeds, for garnish

Soy sauce, for drizzling

Rinse the sushi rice under cold water until the water runs clear. This removes excess starch and helps achieve the ideal texture.

    In a medium saucepan, combine the rinsed rice and water. Bring to a boil over medium heat, then reduce to low, cover, and cook for 18-20 minutes until water is absorbed.

      While the rice cooks, prepare the sushi vinegar by mixing the rice vinegar, sugar, and salt in a small bowl until dissolved.

        Once the rice is done, remove it from heat and let it sit covered for 10 minutes. Then, fluff the rice and gently fold in the sushi vinegar mixture. Allow the rice to cool.

          In a separate bowl, combine the diced tuna, mayonnaise, sriracha, and chopped green onions. Mix well until the tuna is evenly coated.

            Once the rice has cooled, wet your hands and form small rectangular rice patties, about 1 inch thick. Press them firmly to hold their shape.

              Heat sesame oil in a frying pan over medium heat. Dredge the rice patties in panko breadcrumbs, ensuring they are well coated. Fry the patties for 2-3 minutes on each side until golden brown and crispy.

                Transfer the crispy rice patties to a paper towel to drain excess oil.

                  Top each crispy rice patty with a generous spoonful of the spicy tuna mixture. Add a slice of avocado on top if desired.

                    Garnish with sesame seeds and serve with small squares of nori on the side. Drizzle with soy sauce before serving.
