10 small apples or strawberries (or a mix of both)

1 cup granulated sugar

1/2 cup water

1/2 teaspoon lemon juice

Skewers (wooden or bamboo, about 6 inches long)

Optional: sesame seeds or crushed nuts for garnish

Prepare the Fruit: Wash and dry the apples or strawberries thoroughly. If using apples, stick a skewer through the stem-end of each apple, ensuring it goes about halfway through for better stability.

    Cook the Sugar: In a medium saucepan, combine the sugar, water, and lemon juice. Over medium heat, stir until the sugar dissolves completely. Bring the mixture to a gentle boil.

      Monitor the Syrup: Allow the syrup to boil without stirring until it reaches a hard crack stage (around 150°C or 300°F). You can test this by dropping a small amount into cold water; it should harden immediately.

        Coat the Fruit: Once the syrup has reached the desired temperature, remove from heat. Quickly dip each skewer with fruit into the hot syrup, ensuring it’s evenly coated. Lift it out and let the excess syrup drip off.

          Cool the Candied Fruit: Place the coated fruit on a piece of parchment paper or a silicone mat. Allow them to cool at room temperature until the syrup hardens (about 5-10 minutes).

            Garnish (Optional): Before the syrup hardens, you can sprinkle sesame seeds or crushed nuts over the candied fruit for an added texture and flavor.

              Serve: Enjoy your Tanghulu fresh and crisp!
